In GarageBand, you can select the Input Source to be Mono 1, Mono 2, or Stereo 1/2. Here’s a good reference on mono vs. stereo.
Someone needs to write an article like this one but update it for iLife ‘08.

Speech recognition on wav file

I have a wav file of people talking. I want to turn it into text, automatically. Is there any way to do this?
The closest I got with many, many Google searches is Wikipedia’s List of speech recognition projects. Still I couldn’t find a suitable product that did what I wanted.

How to recover Audacity temp files

Audacity crashed when I was trying to maximize its window, so I lost some audio. When I restarted Audacity, it informed me that the audio might be in temp files, but Audacity can’t recover them automatically.
